The tea leaves used for Miya Matcha are carefully selected from the first harvest and are shade-grown for at least three weeks prior to harvesting. This traditional shading process blocks the majority of sunlight, which has a direct impact on the flavor and quality of the matcha.

After the leaves are harvested, the stems and veins are removed, and the remaining tencha is ground to perfection. The grinding process is slow enough not to create too much heat, which would affect the quality of the powder and damage the flavor.

The semi-processed leaves are stored in temperature-controlled units and processed and ground to matcha in small batches as needed. This allows Miya Matcha to be shipped to the United States every two to three weeks by express air freight, ensuring the freshness of the product throughout the year.
